Scones

This recipe has been a family favorite for nearly 30 years.

Scones

  • 2 cups flour

  • 2 teaspoons baking powder

  • 1 tablespoon sugar

  • 6 tablespoons butter - softened

  • 2 eggs - well beaten

  • 1/2 cup heavy cream

  • 1/2 teaspoon vanilla extract

Heat oven to 400° bake 8 to 10 minutes.

Combine dry ingredients and mix well, work in butter then add wet ingredients. Stir until blended. Kneed for one minute.

Roll out dough to a three-quarter inch thick slab then cut into wedges. You may need more flour if your dough is very wet. Bake on a baking stone for 8 to 10 minutes until golden.  Bake on parchment paper on a baking tray for 12 minutes or until golden.

Serve with butter, jam and if you have it, clotted cream.
