Lemongrass Paste

Lemongrass is one of those herbs that are hard to find in my local area grocery stores, so when I do find it I make sure to procure some and turn it into lemongrass paste and tuck it away in my freezer to use whenever a recipe calls for it.

Peel back the outer husk to reveal the white flesh, chop it into small 1 inch pieces making it easier for your food processor to purée it. Mine seemed a bit dry so I had to add some water to it in order to make it into a paste versus looking like thistle down (my photo of it in the food processor). Lemongrass is delicious in many recipes, it adds a brightness of flavor to curry, soups and stews.
